1 medium banana (approx. 90g flesh)
1/2 - 1 tsp ground cinnamon
1 free-range or organic egg, whisked
1 tablespoon of shredded coconut
2 tablespoons of almond meal/flour
1 teaspoon of flaxseed meal
2 teaspoons of coconut flour
A little coconut oil to grease the mug

Optional Extras:

1 tablespoon of coconut yoghurt to serve
Sprinkle of cinnamon

Method

  1. Use at least a 300ml mug or ramekin & rub the smallest amount of coconut oil around the bottom & sides.
  2. In a bowl, mash the banana well then add all the other ingredients.  Mix well & let it sit for a couple of minutes as the coconut flour will thicken the mix slightly.
  3. Pour into your mug & microwave for 90 seconds. (oven instructions: 180°C/355°F for 20-25mins).
  4. Let it cool for a minute or two in the mug.  You can eat it warm directly out of the mug, or wait 5 mins and remove from the mug to cool completely.
  5. Optional to serve with an extra sprinkle of cinnamon & some coconut yoghurt.
