Raw Apple Pie


These are a great way to satisfy a sweet craving. You only need half an apple for the filling, so you could make 2... it will keep unfilled for a few days (if you can stop yourself!!)

Ingredients

Pie Case

1 medjool date (seed removed)
1 tablespoon of raw almonds
1 heaped tablespoon of shredded coconut
1/2 teaspoon of water (may not need it)

Apple Filling

1/2 small apple, small dice
1 teaspoon of lemon juice
1 teaspoon of raw honey or maple syrup
1/8 teaspoon of cinnamon (add more to taste)

Method

Note:  As you only need 1/2 an apple for one serve, you could make 2 little pies & double the recipe.  The apple will keeps nicely in an airtight container in the fridge for a few days.  The flavours keep infusing.

1.  Make the pie case by blitzing all ingredients in a small blender.  It should all come together into a paste in around 30 seconds.  If you need to, add around 1/2 tsp of water to help it bind.
2. Form the paste into a ball & using your fingers make it into a round.  We used a small ceramic dipping bowl about 8cm in width to form the pie shape.  Don't press it in as it may not come out easily.
3. Place into the fridge for at least 30mins - or whenever ready to use.  It should easily come out of the mould in one piece.
4. The apple filling is made by gently mixing all the ingredients together and placing into the pie case just prior to serving.
5. Optional to serve with coconut yoghurt.  Serve immediately!
