Dark Chocolate Mug Cake

Ingredients

1 egg
2 tablespoons of almond meal
2 teaspoons of coconut flour
1 tablespoon of raw cacao
1/4 teaspoon of GF baking powder
2 tablespoons of unsweetened almond milk
2 teaspoons of pure maple syrup
1/4 teaspoon of pure vanilla extract
Pinch of sea salt

Method

  1. Grease a mug or ramekin very lightly with coconut oil.
  2. In a bowl, whisk the egg then add in the rest of the ingredients and mix well.
  3. Let the mixture sit for around 2 minutes, stirring occasionally.  Coconut flour will thicken the mixture during this time.
  4. Pour the mixture into a mug and cook in the microwave for around 90 seconds.  Different microwaves will vary in time.  Start at 60 seconds and add more time if needed.  NOTE: This will cook in the oven at 170°C for around 20mins.
  5. No topping needed, but fresh berries would be an awesome match.  
  6. Let it cool for a while before eating as it will set more as it cools.  If you want to eat it cold, after a few minutes remove it from the mug.  This will stop it from sweating & allow it to set more as it cools.
