Regardless of what time you choose to eat breakfast, you are ‘breaking a fast’, so you want to make sure it’s something nutritious & delicious.
Most of these recipes don’t need a lot of forward planning. These ingredients can become staples that you always have on hand, and the fresh ingredients can go on your weekly shop.

1. Strawberry Overnight Oats
Prep these the night before for an extra super easy breakfast.
Recipe:
1/3 cup organic rolled oats
1 tbsp chia seeds
1/3 cup coconut milk
1/3 cup coconut water (can swap for almond milk or normal water)
2 tsps raw honey or maple syrup
2 strawberries, chopped
Extra 3 strawberries for the top
Put the rolled oats & chia into a jar or bowl. Mix the coconut milk, coconut water & honey together until blended and then add to the oats. Continue to stir occasionally for 5 mins so the chia seeds don’t clump. Cover and put in the fridge overnight. Serve with extra strawberries.
2. Omelette Roll with Avocado & Smoked Salmon
A few minutes to make the omelette and then fill it with anything you like.
Recipe:
2 eggs, whisked
1/2 tsp extra virgin olive oil or coconut oil
1/2 avocado, sliced
50gms smoked salmon
Chopped chives & dukkah (optional)
Heat a small pan to a medium heat. Add the oil & once heated add the whisked eggs. Cook for around 2 minutes, or until the egg is quite set from the top. Flip the omelette and cook for another 30secs - 1min to finish cooking.
Place the omelette on a plate, fill it with the avo, salmon & chopped chives. Roll it up and enjoy!
3. Pan Toasted Granola
To make this even quicker in the morning. Have the oats, seeds & coconut measured out ready to go.
Recipe:
1/2 tsp coconut oil
1 tsp maple syrup
1/4 cup organic rolled oats
2 tbsps pepitas
1 tbsp sunflower seeds
2 tbsps coconut flakes
1/4 tsp ground cinnamon
1/4 tsp vanilla extract or powder
Small pinch of sea salt
1 small apple, grated just before using
Coconut yoghurt & berries to top (optional)
Heat the coconut oil & maple syrup in a small pan on a low – medium heat. You need some heat to toast, but too much will burn your delicate ingredients. Once heated, add the oats, pepitas & sunflower seeds and stir gently. If your coconut flakes are not already toasted put them in at the same time & cook for 2 to 3 mins. Add the cinnamon, sea salt & vanilla and stir gently for another minute. Lastly add the apple, and the coconut flakes (if toasted) and stir to heat for around 30 seconds or so. Serve in a bowl with optional fruit and coconut yoghurt.
4. Herb & Goat's Cheese Scramble
Easy & delicious, choose your favourite herb!
Recipe:
2 eggs
2 tsps coconut yoghurt
2 tsps chopped herbs (sage, parsley, thyme)
1 tbsp crumbled goat's fetta
1 tsp toasted pine nuts (optional)
Mix eggs with the yoghurt until just combined and stir in herbs and feta. Heat a non-stick pan to medium heat (add a little oil if needed). Add the eggs and once they start to set, use a spatula to gently fold inwards. Continue folding eggs over until almost cooked through, they will continue to cook once removed from the heat. Season with salt and pepper and add pine nuts if using.
5. Blueberry Dream Smoothie
Smoothies are definitely an easy breakfast & this one is deliciously satisfying.
Recipe:
3/4 cup almond milk
1/4 cup frozen or fresh blueberries
1 frozen or fresh banana
2 tsps flaxseed meal
1/2 tsp chia seeds
1/4 tsp vanilla extract
3 ice cubes - may need more if fruit not frozen
