5 Killer Dressings You & Your Salad Need Now!

It’s no surprise that I am a salad lover .... but the real reason I love salad so much is that I know how to make a killer salad dressing. Actually, quite a few of them.
Us modern day humans can have quite complex palates, so a few plain salad veggies in a bowl isn’t going to cut it. Also, a bad salad dressing can ruin your day!… possibly a bit dramatic…. but this is food people!!
Well for One’s focus is always on one serving, because some of us salad lovers are flying solo. The bonus with this is you can build it up to as many servings as you like. Make a double batch for you, or serve a family of 6, it’s your choice.
I don’t think there are too many secrets to matching a dressing to a particular salad. The flavour profile of most salad ingredients are low-key allowing the dressing to boost those flavours. However, if you adding cheese to your salad then you really do need to think about flavour matching. Creamier dressings will normally work best.
BIGGEST TIP: Don’t dress your salad until you are ready to eat it, no one likes a soggy salad.

1. Lime & Honey
Easy to remember & delicious on almost any salad. This is one is always in my head for those busy times.
Recipe:
1 tbsp fresh lime juice
2 tsps extra virgin olive oil
1 tsp raw honey
Pinch of sea salt
Mix together in a small bowl.
2. Spicy Thai Style
Sweet, Sour, Hot & Salty. 4 components which make up a lot of Asian Cuisine. Match this dressing with some hardy lettuce, julienne carrots, cucumber ribbons, sliced cabbage, fresh herbs – especially coriander, mint & basil.
Recipe:
1 tbsp fresh lime juice
2 tsps fish sauce
1 tsp coconut sugar
¼ - ½ Birdseye red chilli, finely chopped
1 tsp chopped roasted peanuts
Mix together in a small bowl.
3. Coconut, Lime & Coriander
I could eat this on anything, any time of the day! If you reeeeealy don’t like coriander we also use mint or basil and it’s just as delicious!
RECIPE:
2 tbsps coconut yoghurt
Zest of 1 small lime
1 ½ tsps fresh lime juice
½ - 1 clove of garlic, grated
¼ cup fresh coriander (or other choice of herb)
Pinch of sea salt
Blending this is best. One serve will only blend in a small blender.
If you don’t have a small blender, finely chop everything & mix together.
4. Satay!!!
This gorgeous raw satay sauce works perfectly with salad. It is a bit of a decadently rich salad dressing, however it’s full of delicious healthy ingredients and tastes divine! Pair it with hardier greens, carrots, cucumber, shallots etc…
Recipe:
1 tbsp natural peanut butter
1 ½ tbsps. unsweetened coconut milk
1 small clove of garlic, grated or minced
1 tsp fresh lime juice
½ tsp coconut sugar
½ Birdseye red chilli, finely chopped (can use chilli flakes)
Pinch of sea salt
1 tsp water
Mix all ingredients together in a small bowl. Peanut butter can have different consistencies. If needed add more water to get your desired dressing consistency.
5. Maple & Mustard
This is another easy but really delicious dressing that you can whip up in a minute. Sweet & Tangy it will compliment almost any salad.
Recipe:
2 tsps pure maple syrup
2 tsps Dijon mustard
1 tsp extra virgin olive oil
½ tsp apple cider vinegar
Pinch of sea salt
Mix together in a small bowl.
