Cauliflower Fried Rice


A super tasty veggie infusion into your diet.

*Vegetarian option: Swap out fish sauce with a vegan fish sauce, or just add some more tamari and maybe a pinch more salt.

Ingredients

300 grams of cauliflower rice
1 long green shallot / scallion, finely sliced
1 clove garlic, finely diced or minced
3 cm piece of ginger, grated
1/2 bird's eye chilli, finely sliced (add more if you like it hot!!)
3 swiss brown mushrooms, sliced (most other mushies are fine)
1 cup baby spinach
1 tablespoon of coconut oil
1 egg, for the top
Pinch of black or regular sesame seeds

Dressing

1 teaspoon of wheat-free tamari
1/2 teaspoon of sesame oil
1/2 teaspoon of *fish sauce

Method

  1. Heat a small pan to a medium heat, add the oil, then add the cauliflower.  Saute for 3 minutes then add the mushrooms, shallot, ginger, garlic & chilli and fry for a further 2 minutes 
  2. Add the spinach and stir through until slightly wilted.  Mix all of the dressing ingredients together and pour over the cauliflower rice.  Gently mix to combine.
  3. Place the fried cauli rice in a bowl, wipe out the pan, and place it back on the heat.  Add a little oil if needed and fry the egg.  
  4. Place the egg on top of the rice and sprinkle with sesame seeds.  Enjoy!
