Prawn Fajitas with Avocado Cream


2 Serves.

The prawns have a quick lime, garlic & chilli marinade & only take minutes to cook. Serve in lettuce cups for a low-carb option, or add in some of our homemade (or store-bought) almond tortillas.

Ingredients

170 grams of peeled & deveined green prawns (approx. 300g with shell)
4-6 lettuce leaf cups
1 medium cucumber, peeled into ribbons
Watercress or sprouts to serve (optional)
Long red chilli slices for topping (optional)
Fresh coriander leaves for topping (optional)
Optional to serve with our Almond Meal Tortillas or some quality store-bought tortillas of your choice

Marinade:

1 tablespoon of fresh lime juice
1 clove of garlic, grated or minced
1 small red chilli (bird's eye), finely sliced
2 teaspoons of avocado oil or extra virgin olive oil
Pinch of sea salt

Avocado Cream:

1 avocado, seed out & skin off
1 tablespoon of coconut yoghurt (can use Greek yoghurt if dairy tolerant)
1 clove of garlic, grated or minced
2 teaspoons of fresh lime juice
1/4 cup of fresh coriander leaves (optional)
1/4 teaspoon of sea salt

Method

  1. Prepare all the ingredients for a quick cook.
  2. Make the marinade by mixing all the ingredients together in a medium ceramic or glass bowl.  Add the prawns and marinate for just a few minutes while you make the avocado cream.
  3. Add all the avocado cream ingredients together into a small blender.  Pulse blend until all just combined.  Put into a bowl ready to serve.
  4. Heat a pan to medium heat.  There is oil in the marinade so there is no need to add oil to a good non-stick pan.  If you don’t have one brush a little oil before adding the prawns.
  5. Add the prawns to the pan, checking the heat is not too high as the prawns will burn quickly.  The prawns will only need around a minute or two on each side, depending on how thick they are.  Check the thickest end of the prawn and they will be ready when the middle is no longer translucent.
  6. Serve prawns into lettuce leaves, tortillas or both, with cucumber, cress & avocado cream.  Top with fresh coriander leaves & extra chilli (optional).
