Pork & Mushroom Meatballs with Spicy Slaw

These little pork & mushrooms meatballs are full of flavour & extremely delicious! We've added a spicy slaw, instead of a creamy slaw, and kept this dish fresh with herbs & chilli.

TIP: If you're avoiding grains or carbs, swap out the brown rice for some large lettuce leaves or one of our Almond Meal Flatbreads.

Ingredients

250 grams of lean pork mince (free range or organic if possible)
150 grams of button mushrooms, sliced
2 long green shallot/scallions, sliced
1 clove of garlic, sliced
1/4 cup of fresh mint leaves
1/4 cup of fresh coriander leaves
2 teaspoons of raw honey
2 teaspoons of fish sauce
Pinch of sea salt
1 teaspoon of cold pressed coconut oil or extra virgin olive oil
1/2 cup of cooked brown rice

Spicy Slaw

2 cups of shredded wombok cabbage
1 cup of shredded purple cabbage
1 cup of carrot, julienne or grated
A few mint leaves
A few coriander leaves

Spicy Slaw Dressing

2 tablespoons of fresh lime juice
3 teaspoons of fish sauce
2 teaspoons of coconut sugar
1 clove of garlic, grated or minced
1 red birdseye chilli, finely sliced

Method

  1. Having frozen portions of cooked brown rice ready to go is great for quick dinners.  However, if you don’t have any ready you will need to do this step first.
  2. In a small blender add the mushrooms, shallots, garlic, mint & coriander.  Blitz to a slightly chunky paste. 
  3. Add this mix to pork mince, and also add the honey, fish sauce & salt.  Using your hands mix all the ingredients together. 
  4. Form the mix into balls, should make around 10.  Pop them into the fridge while you make the slaw.
  5. Prepare the slaw ingredients.  Make the dressing & stir well.  Add the dressing to the slaw as it can infuse while you cook your meatballs. Remembering this is 2 serves and only dress half the salad if it's not being eaten immediately.  
  6. Heat the oil in a large pan to a medium heat.  Making sure your pan is not too hot or the meatballs will burn.  Take the meatballs out of the fridge, place them into the pan & flatten them down lightly. 
  7. The meatballs will take around 4-5mins to cook on each side. 
  8. Once cooked add them to a bowl with the brown rice & slaw.  Delicious!
