Cauliflower Fritters


Cauliflower is a great carrier food. Meaning the flavour profile is low, so you can add lots of different flavours and it will taste great.

We've served these fritters with a soft boiled egg, avo & chilli flakes. However, almost anything goes, bacon, guacamole, roasted tomatoes, roasted veggies... the list goes on.

Ingredients

180 grams of cauliflower (approx. 1/4 head cauli)
1 long green shallot /scallion, chopped
1 tablespoon of almond meal
1 teaspoon of flaxseed meal
1 egg, lightly beaten
Large pinch of sea salt
1/2 teaspoon of cold pressed coconut oil or extra virgin olive oil
1 soft boiled egg, to serve
1/2 avocado, sliced
Sprinkle of chilli flakes (optional)

Method

  1. Put a small pot of water on the boil for your soft boiled egg.
  2. Rice the cauliflower & chopped shallot in a small blender.  See notes below.
  3. Whisk the egg in a small bowl and add the cauli mix, almond meal, flaxseed meal & salt. Mix until well combined.  Set aside for a few minutes as the flax with thicken the mixture slightly.
  4. Heat a small pan to a medium heat & add the oil.  It's best to form the cauliflower fritters with your hands as the mixture will hold together better.  Make 4 fritters & place them into the heated pan.  Pressing down to flatten out slightly.  Cook for around 4 minutes.
  5. At the same time you start cooking the fritters add your other egg to the boiling water & cook for around 6 minutes.  The soft boiled egg will be ready at the same time as the fritters.
  6. Carefully flip the fritters and cook for another 2 minutes.   
  7. Serve on a plate with the soft boiled egg, avocado, & optional chilli flakes.
Note: As the fritter mixture is not held together by any flours they are more fragile during cooking time.  Cauliflower can hold a bit a water so you do have the option of squeezing out the water after ricing the cauli.  Or making the fritters with your hands and squeezing the mixture together will help keep their shape.
