Omelette Roll with Avocado & Smoked Salmon


Egg Roll or Omelette Rolls are so quick and easy in the mornings. You can fill them with so many different things - goat's cheese, tomatoes, leftover roasted veggies, herbs etc..

Ingredients

2 free range or organic eggs, whisked well
1/2 teaspoon of extra virgin olive oil or butter
1/2 avocado, sliced
50 grams of smoked salmon
Some chopped chives (optional)
Sprinkle of dukkah (optional)

Method

1. Heat a small pan to a medium heat and add in the oil.  Once heated, add the whisked eggs and let them sit on the heat and cook for around 2 minutes.  
2.  Once the most of the egg has set on the top, flip the omelette over and cook for another 30 seconds to a minute until it's finished cooking and remove from pan onto a plate.
3.  Place the avo, salmon & chopped chives into the middle of the omelette & roll it up.  Yum!
