Cauliflower & Potato Soup


Soup for one can be an easy, light meal. This one is really delicious too.

TIP: Vegetable weights are a guideline only. If you have larger veggies just add a little more stock.

Ingredients

1/4 head of cauliflower (180g)
1 small potato (120g / 95g peeled)
1 cup of vegetable stock or broth
1 teaspoon of onion powder
1/8 teaspoon of garlic powder
Pinch of sea salt (optional)
1 tablespoon of coconut milk for topping (optional)

Method

1. Cut the potato into a small dice, about 1cm cubes & the cauliflower into florets.
2. Add all the ingredients into a pot with a lid & bring to a simmer.  Simmer gently for around 15-20mins or until vegetables are tender.
3. The liquid may not cover the ingredients, however stirring occasionally, moving the vegetables around and steaming with the lid on will cook them all evenly. 
4. Some stocks are salty, so check for salt at this point and add some if needed.
5. Once cooked, blitz with a stick blender until smooth.  Optional to add a spoonful of coconut milk for extra creaminess.
