Warm Tofu Noodle Salad with Spicy Dressing


This gorgeous vegan noodle dish is sure to satisfy.

TIP: We’ve used a firm tofu for this recipe, however it also works well with a softer tofu. Tempeh is another option & there are now some great soy-free varieties.

50 grams of rice noodles, cooked as per instructions
100 grams of tofu, cut into 1-2cm pieces
1 small cucumber, peeled into ribbons
A few slices of red onion (or sliced long green shallot)
1 small cob of corn, steamed or boiled
1 cup of fresh herbs, coriander & mint
1/2 long red chilli, sliced
1/2 teaspoon of cold pressed coconut oil or evoo

Marinade

1 teaspoon of tamari or soy sauce
1 clove of garlic, grated or minced

Dressing

1 tablespoon of fresh lime juice
1 1/2 teaspoons of tamari or soy sauce
1 teaspoon of coconut sugar
1/4-1/2 bird's eye chilli, finely diced
1 teaspoon of chopped roasted peanuts or cashews

Method

  1. The noodles will probably need to soak for around 20mins, so do this step first. The noodles will then be ready at serving time and still be warm.
  2. Mix the marinade ingredients together, and marinate the tofu while you prepare the dressing & salad ingredients.
  3. Prepare the dressing by mixing all ingredients together in a small bowl.  Stirring occasionally.
  4. Heat the oil in a small pan to a medium heat.  Once the pan & oil are heated add your tofu, it will only take a few minutes turning to brown on each side.
  5. Add 3 tsps of the dressing to the warm noodles and mix through.  Place into a bowl, top with the salad ingredients, tofu, herbs & chilli.  Spoon over the rest of the dressing.  Enjoy immediately!
