Quinoa Flour Pancakes


Quinoa flour is a great gluten free option for pancakes. It's quite a heavy flour so these little morsels will fill you up until lunch.

TIP: Quinoa has an "earthy" taste so adding yoghurt and berries is a must!

Ingredients

1/4 cup of quinoa flour
1/8 teaspoon of baking powder
1 small egg
1 teaspoon of pure maple syrup
1 tablespoon of unsweetened almond milk (or any plant based milk)
1/2 teaspoon of vanilla extract
1/2 teaspoon of cold pressed coconut oil or extra virgin olive oil
3 strawberries, or other berries (to serve)
2 tablespoons of unsweetened coconut yoghurt (to serve)

Method

  1. In one bowl mix together the quinoa flour and baking soda.  In another bowl beat the egg & add maple syrup, milk & vanilla, then add to the flour. Set aside while you heat up your pan.
  2. Brush a pan with the oil and heat to a medium heat.  Spoon in the mixture to make 3 pancakes.  Cook for a minute or 2 on the first side and then flip and cook for another 30 seconds to a minute until golden.
  3. Serve warm with yoghurt and berries.
