Chicken & Asparagus with Basil Gremolata


We love one pan dishes & this one is delish. The only extra step is the gremolata & you are going to love it.

TIP: Basil can be swapped out with most soft herbs. Parsley is always a great herb for gremolata. Also, the little cherry tomatoes on the vine look great, however you can use a few loose cherry or grape tomatoes as well.

Ingredients

120 grams of chicken thigh, no skin or bone
80 grams (small bunch) asparagus
120 grams of cherry tomatoes on vine (or loose cherry/grape tomatoes)
2 teaspoons (10ml) cold pressed coconut oil
1/4 (40g) avocado, sliced

Basil Gremolata

1/4 cup (3g) fresh basil leaves, washed & dried well
1 tablespoon (8g) walnuts
1 tablespoon (8g) parmesan cheese, grated
Zest of 1 small lemon
1 small clove of garlic, sliced
Pinch of sea salt

Method

  1. Heat the oven to 180°C/350°F/Gas4.
  2. Line a baking tray with baking paper.  Place the chicken thigh on the tray & drizzle over 1 tsp of oil.  Place into the oven.  Note: the chicken will take a total of approx. 25 minutes, and you will add in the tomato & asparagus at different times.
  3. After 10 minutes in the oven add the tomatoes & drizzle with some oil.  Put back into the oven for 15 mins. 
  4. At the last 5 minutes of cooking add the asparagus.  Using your tongs roll the asparagus into any of the oil and juices that are on the tray, then spread them out and put everything back into the oven. 
  5. After 5 minutes check that the chicken has cooked through & take everything out of the oven.
  6. Also during this last 5 minutes of cooking, blitz all your gremolata ingredients together in a small blender (see notes below).  If you make this any earlier some of the ingredients may go a little brown in colour.
  7. Place everything on a serving plate with your avocado & top with the gremolata. 

 

*Note if you don’t have a small blender you can use a mortar & pestle or just mince and chop your ingredients finely and mix together for the gremolata.
