Apple & Goat's Cheese Salad


A quick, easy and very tasty salad!

Note: If you can't tolerate dairy you can easily leave the goat's cheese off or use a vegan option.

Ingredients

Ingredients

2 cups of chopped cos lettuce or other leafy greens
1/2 small green apple, diced
1 long green shallot/scallion, sliced
25 grams of soft goat's cheese, broken in pieces
1 tablespoon of flaked almonds

Dressing

2 teaspoons of extra virgin olive oil
1 teaspoon of white wine vinegar or other vinegar of choice
1/4 teaspoon of Dijon mustard
1 good pinch garlic powder
1 good pinch onion powder
1 pinch of dried oregano
Himalayan or sea salt & cracked black pepper to taste

Method

  1. Combine all of the dressing ingredients in a small screw top jar or small bowl and shake or whisk until well combined and creamy.
  2. Place all of the salad ingredients in a serving bowl and drizzle with the dressing. Toss gently to combine.
  3. Serve as a side or double for a light meal.
