White Chocolate Raspberry Chia Seed Pudding


Let's face it, white chocolate and raspberries were just made for each other and although there is no actual white chocolate in this recipe it definitely takes your mind there!

Chia seeds are full of important nutrients and they are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fibre, iron, and calcium.

Tip: Stir in some coconut yoghurt for a creamier pudding.

Note: There is a minimum of 2 hours soaking time required.

Ingredients

1/2 cup of unsweetened almond milk
1 tablespoon of coconut water
1 teaspoon of pure maple syrup
1/2 teaspoon of vanilla extract
1 teaspoon of desiccated coconut
5 fresh raspberries, mashed
1 tablespoon of + 2 tsp chia seeds

Method

  1. Place all ingredients into a glass jar leaving the chia seeds until last to prevent them from clumping together.
  2. Stir mixture a couple of times during the next 10 minutes then place in the fridge for at least 2 hours or overnight. 
  3. You can serve with extra fresh raspberries
