Pina Colada Chia Seed Pudding


Do you like Pina Coladas... you know you just sang that in your head!

Chia seeds are full of important nutrients and they are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fibre, iron, and calcium.

Note: We used the Pure Harvest Coconut Quench to keep it light but you can use full-fat coconut milk, almond milk or any other plant-based milk.

Tip: Stir in some coconut yoghurt for a creamier pudding.

Note: There is a minimum of 2 hours soaking time required.

Ingredients

1/4 cup of coconut milk
1/4 cup of coconut water
1 teaspoon of pure maple syrup
1/2 teaspoon of vanilla extract
2 teaspoons of desiccated coconut
1 tablespoon + 2 teaspoons chia seeds
1/2 1x centimeter slice of fresh pineapple (40g) diced in small pieces

Method

  1. Place all ingredients into a glass jar except the chia seeds and pineapple. Stir in the chia seeds quickly to prevent them from clumping together then stir in the pineapple.
  2. Stir mixture a couple of times during the next 10 minutes then place in the fridge for at least 2 hours or overnight. 
  3. You can serve with extra fresh pineapple and coconut flakes
