Cherry Ripe Chia Seed Pudding


Cherry Ripe. Need we say more?
Chia seeds are full of important nutrients and they are an excellent source of omega-3 fatty acids, rich in antioxidants and they provide fibre, iron, and calcium.

Tip: Stir in some coconut yoghurt for a creamier pudding and top with your favourite muesli.

Note: There is a minimum of 2 hours soaking time required.

Ingredients

1/2 cup of unsweetened almond milk
1 tablespoon of coconut water
1/2 teaspoon of pure maple syrup
1/4 teaspoon of vanilla extract
1 tablespoon of raw cacao
2 teaspoons of desiccated coconut
4 fresh cherries, pitted, chopped and lightly mashed
1 tablespoon of + 2 tsp chia seeds

Method

  1. Place all ingredients into a glass jar leaving the chia seeds until last to prevent them from clumping together. Mix well.
  2. Stir mixture a couple of times during the next 10 minutes then place in the fridge for at least 2 hours or overnight. 
  3. You can serve with more fresh cherry, coconut flakes, or cacao nibs
