Cauliflower Mash


Light and creamy and oh so similar in texture to potato mash without the starchy carbs!

Note: The goal here is to get the same consistency as mashed potato so if you overcook the cauliflower or don’t squeeze the liquid out you won’t get the same result.

Tip: If you don’t have a food processor you can use a stick blender.

Ingredients

150 grams of cauliflower florets
2 teaspoons of butter or ghee
2 teaspoons of whole egg mayonnaise*
1 pinch of ground nutmeg
salt and pepper to season

Method

  1. Steam cauliflower until just tender, 8-10 minutes only.
  2. Squeeze out the excess water either by placing in a sieve and using a small bowl to push down and squeeze water out or placing inside a clean cloth or tea towel and squeezing.
  3. Place the cauliflower in a small food processor with the remaining ingredients and blend until a smooth consistency is reached. Season to taste with salt and pepper.
  4. Top with more butter & fresh herbs if desired.
*We love to make our own mayonnaise but if you are using store bought choose organic whole egg with no added sugar. The macros are worked on our recipe and you can find it in the Dressings and Sauces section
