Layered Berry Chia Seed Pudding


A creamy, sweet and healthy breakfast that can be taken on the go. Full of protein, omega 3's, potassium and atioxidants and it's Vegan!
Note: Allow at least 2 hours soaking time.
Tip: Any soft berries will work in this recipe

Ingredients

1/2 cup of plant based milk (we used Pure Harvest Coco Quench)
1 tablespoon of coconut water
1 teaspoon of maple syrup
1/2 teaspoon of vanilla extract
1 tablespoon + 2 teaspoons chia seeds
50 grams of strawberries and raspberries (any ratio will work)
extra berries to serve (optional)

Method

  1. Mix all of the ingredients except the berries in a mall jar or bowl. Stir a few times over the next 5 minutes then place in the fridge overnight or for a minimum of 2 hours.
  2. When ready to serve, mash the berries in a small bowl and add half of the pudding mixture.
  3. Layer the berry mixture with the remaining mixture in a serving glass, top with extra berries if using and enjoy!

Note: Alternatively you could just add the berries to the entire mixture.
