Chilli Garlic Mushrooms


This recipe takes mushrooms as a side to the next level! Serve these on toast, with your breakfast eggs or on your favourite protein, trust us they will work with pretty much everything!

Note: We used swiss brown mushrooms for this but any type will work.

Tip: If you are not a fan of chilli you could replace it with diced capsicum.

Hint: If you are not following a vegan diet a teaspoon of butter melted through at the end is amazing!

Ingredients

2 teaspoons of extra virgin olive oil
100 grams of sliced mushrooms of choice
1 long red chilli, sliced
1 long green shallot/scallion, sliced
1 large or 2 small garlic cloves, sliced
zest of 1 lemon
1 teaspoon of fresh lemon juice
1 teaspoon of butter (optional)

Method

  1. Heat the oil in a small pan to medium and cook the mushrooms until nicely browned and caramelised.
  2. Add the chilli, shallots and garlic and cook for a further 2 minutes then stir in the zest and juice.
  3. If using the butter add to the pan and stir through before serving.
