Coconut Banana Overnight Oats


Overnight oats are great for those of us that don't have a lot of time in the mornings.
This combination of banana and coconut is super creamy and delicious.

Tip: If you don't want to use coconut milk any plant-based milk will work.

Ingredients

1/3 cup of full fat coconut milk
2 tablespoons of water
1 teaspoon of coconut nectar or maple syrup
1/4 teaspoon of vanilla extract
1 tablespoon of shredded coconut
1/2 teaspoon of chia seeds
1/2 cup of wheat free rolled oats
1/2 small banana, sliced
extra banana & coconut to serve (optional)

Method

  1. Combine all of the ingredients in order as listed and mix well. Cover & place in the fridge overnight.
  2. Add a little more milk to loosen up if needed. Serve with extra toppings if desired and enjoy.

Note: You can mix these in a bowl and leave as is or mix and add to a jar or if your jar is big enough you can mix directly into it.
