Coriander, Lime & Chilli Roasted Potatoes


Roasted potatoes like you have never tried before!
All the flavours of Mexico to serve alongside your favourite protein.

Tip: We used Chipotle chilli powder but smoked paprika or just your favourite chilli powder will work.

Ingredients

1 medium brushed potato, skin on (150g)
1/2 teaspoon of macadamia or extra virgin olive oil
1/2 teaspoon of fresh lime juice
zest of 1/2 a lime
1 good pinch chipotle chilli powder or other of choice
1 good pinch Himalayan or sea salt
1/2 teaspoon of chopped fresh coriander to serve

Method

  1. Heat your oven to 200°C - 400°F – Gas mark 6 and line a tray with baking paper.
  2. Cut the potato into 2-3cm cubes.
  3. Mix the oil, juice, zest, chilli and salt in a bowl and add the potatoes. Toss to coat and place on the prepared tray making sure to keep them separated.
  4. Place in the oven and cook for approx. 20 minutes, turning half way through. Potatoes are done when tender and crisp and browned on the outside.
  5. Serve with your favourite protein and a side salad.
