Broccoli Rice


Something a little different to your regular side of greens! We think it tastes amazing and it works really well as a healthy alternative to rice.

Ingredients

1/2 teaspoon of cold pressed coconut oil or other oil of choice
100 grams of broccoli florets, riced (approx. 1cup)
1 small garlic clove, finely diced
1/2 teaspoon of fresh lemon juice
Himalayan or sea salt & cracked black pepper to taste

Method

  1. Heat oil in a medium sized pan to medium heat. Add the riced broccoli and cook for 2-3 minutes or until starting to soften.
  2. Add the garlic and cook for 1-2 minutes more then add the lemon juice, stir until combined, cooking for a further minute or until done to your liking.
  3. Season to taste and serve as you would rice.
Note: To rice the broccoli we have found a small food processor works best or if your stick blender has a jug and blade attachment this will also work.
