Cauliflower Rice


A very easy side that will work with pretty much any protein! It's a great replacement for rice or starchy mashes and the flavour is so light and simple.

Ingredients

1 teaspoon of cold pressed coconut oil or other oil of choice
100 grams of cauliflower florets, riced (1 cup)
1 small garlic clove, finely diced
1/2 teaspoon of fresh lemon juice
Himalayan or sea salt & cracked black pepper to taste

Method

  1. Heat oil in a medium sized pan to medium heat. Add the riced cauliflower and cook for 2-3 minutes or until starting to soften.
  2. Add the garlic and cook for 1 minute more then add the lemon juice, stir until combined, cooking for a further minute or until done to your liking.
  3. Season to taste and serve as you would rice.
Note: To rice the cauliflower we have found a small food processor works best or if your stick blender has a jug and blade attachment this will also work.
