Wedge Salad with Tahini Dressing


Something a little different in the salad section! It's super quick and easy and oh so delicious!

Tip: We love it served in the wedges and placed in the pool of dressing but it would also work as a chopped salad.

Hint: We used a variety of fresh basil, mint and parsley leaves but use whatever you have, chives would also work well. For the seeds, we chose sesame, black sesame and nigella but you could also use pepitas and/or sunflower seeds.

Ingredients

1/2 baby Cos lettuce or Gem lettuce
1/4 cup of small leaf fresh herbs
1/2 teaspoon of mixed small seeds of choice

Dressing

1/4 cup of unsweetened coconut yoghurt
2 teaspoons of hulled tahini
2 teaspoons of fresh lemon juice
1/2 teaspoon of extra virgin olive oil
1/4 teaspoon of dried garlic powder
Himalayan or sea salt & cracked black pepper to taste

Method

  1. Add all of the dressing ingredients to a small bowl and whisk until smooth and creamy. Place in the base of your serving bowl.
  2. Cut the lettuce 1/2 in half again and place in the dressing. Sprinkle with the fresh herbs and seeds. Serve as a side or double for a light meal.
