Green Side Salad with Tangy Dill Dressing


A light and tangy salad that will go with any of your favourite proteins but is also perfect for a light lunch.

Tip: You could easily swap or add any of the salad ingredients for your faves!

Hint: If you are fine with dairy you could easily swap the yoghurt for Greek yoghurt or sour cream.

Ingredients

1 cup of cos lettuce or mixed leafy greens
1/8 small green capsicum, sliced
1/4 small cucumber, thinly sliced
1/2 small tomato, cut in wedges
1/4 medium carrot, julienne
1/8 small red onion, sliced or 1/2 a long green shallot/scallion

Dressing

1 teaspoon of unsweetened coconut yoghurt
1 teaspoon of red wine vinegar or other vinegar of choice
1/4 teaspoon of Dijon mustard
1 good pinch dried dill
2 teaspoons of extra virgin olive oil
Himalayan or sea salt & cracked black pepper to taste

Method

  1. Whisk all of the dressing ingredients except the oil, salt and pepper together until well combined then add the oil 1 teaspoon at a time whisking after each addition. Season to taste.
  2. Place all of the prepared veggies into a serving bowl and gently toss, drizzle with the dressing and serve as a side or double for a light meal.
