Mixed Berry Chia Jam


It doesn't get any easier than this! Two ingredients and 6 minutes and you have jam!

Tip: You can add your choice of sweetener, we chose not to as the berries were sweet enough.

Note: If you would like to use fresh berries you will need to add a little water to make enough liquid.

Ingredients

1/3 cup of 50g frozen berries of choice (we used mixed)
1 teaspoon of chia seeds (3g)
sweetener of choice if using

Method

  1. Heat a small saucepan to medium, add the frozen berries and heat for 2-3 minutes until starting to soften. Start to mash with a fork as they thaw until you have a good ratio of fruit to liquid.
  2. Add the chia seeds and stir for 1-2 minutes until it starts to thicken. Remove from the heat and set aside.
  3. Once cool it will thicken even more and can be kept in the fridge for up to a week. Makes approx. 2 Tablespoons of jam.
  4. We love this served on the Low Carb Paleo English Muffin or with one of our pancake recipes.
