An English Muffin that has only 5 simple ingredients, cooks in 1 minute and is guilt free! It's grain free and will fit in with most diet protocols.
Hint: Results can differ greatly depending on the dish you use and your microwave so you may need to keep an eye on it the first time you try this.
Note: We have toasted it for the pic but it works just as well untoasted. The butter is a serving suggestion only and is not included in the ingredients or macros.

IMPORTANT -

Ingredients
1 free range egg, beaten
1 1/2 teaspoons of extra virgin olive or avocado oil
1/4 cup of blanched almond meal (35g)
1/2 teaspoon of gluten free baking powder
1 good pinch Himalayan or sea salt
Method
Add all of the ingredients to a round 1.5 - 2 cup ramekin or microwave safe dish and whisk until smooth. Our ramekin was 1.5 cups and 9cm across the base.
Place in the microwave and cook on high for 1 to 1 1/2 minutes. It will rise up quite high, once it has stopped rising cook it for another 5 seconds or so then check it. If it's ready it will come away from the sides, be dry on top and spring back when touched. This will depend entirely on the size and style of dish you use.
Remove and let sit for a minute then turn out onto a rack or board to cool slightly (can use paper towel to avoid sweating)
Serve warm, cold or toasted. Top with anything you like!
