Keto Friendly Bacon & Egg Muffin


A bacon & egg muffin on a keto diet would normally be a definite no! but this one is definitely a YES!
Just 5 ingredients and a quick mix, 1 to 1 1/2 minutes in the microwave, done!

Tip: Adjust the toppings to suit your taste.

1 free range egg
1 1/2 teaspoons of extra virgin olive or avocado oil
1/4 cup of blanched almond meal
1/2 teaspoon of gluten free baking powder
1 pinch of Himalayan or sea salt

Toppings

1 lean rasher of bacon, rind removed
1 free range egg
2 slices of fresh tomato
1 cos lettuce leaf
1 teaspoon of butter (optional)

Method

  1. Add all of the ingredients to a round 1 1/2 - 2 cup ramekin and whisk until smooth. The one we used was glass and 10cm in diameter, if you use one smaller or bigger it will change the cooking time.
  2. Place in the microwave and cook for 1 1/2  minutes or until the top has dried and it springs back to the touch.
  3. Cool then slice in half and serve as is or toast for a slight crunch.
  4. While the muffin is cooling cook your bacon & egg to your liking and assemble on the muffin with the salad.
Note: All microwaves are different, we used a 1000 watt microwave and it took just under 1 1/2 minutes, just keep an eye on it after 1 minute and if not quite done use 10 second bursts to finish it.
