Haloumi & Brown Rice Salad with Yoghurt, Lemon & Mint Dressing


If you like haloumi this salad will not disappoint. The haloumi adds a big salty punch to the dish, but it’s the dressing that makes it so delicious.

TIP: You can substitute the brown rice for any other healthy grain like buckwheat or quinoa.

Ingredients

1/4 cup of brown rice
60 grams of haloumi, sliced into strips
1 large handful of salad greens, washed & dried well
1 small cucumber, peeled into ribbons
1 small carrot, julienne
1 long green shallot / scallion, sliced into strips
1 tablespoon of almonds, toasted & chopped (optional)
1/2 teaspoon of extra virgin olive oil

Dressing

2 tablespoons of Greek Yoghurt, plain coconut yoghurt, or coconut milk
1 small clove of garlic, sliced
Zest of 1 lemon
1 1/2 teaspoons of lemon juice
1/4 cup of fresh mint leaves
1 pinch of sea salt

Method

  1. Cook the rice as per instructions and set aside to cool a little.
  2. While the rice is cooking, make the dressing by blitzing all ingredients together in a small blender.  If you don’t have a small blender you can finely chop & mince all ingredients and then mix together.  If you are using coconut yoghurt it can be quite thick.  Add a few teaspoons of water until you get a great dressing consistency.
  3. Prepare the salad ingredients. 
  4. Place a mound of rice and all salad ingredients into your serving bowl.
  5. Heat a small pan to a medium heat.  If you are toasting nuts do this prior to cooking the haloumi.  It will only take 2-3mins to toast them.  Then chop them and set aside. 
  6. In the same pan heat the oil and cook the haloumi for 1-2 minutes each side until golden brown.
  7. Top the salad with the haloumi, add the dressing and the nuts.  Enjoy, so delicious!
