Devilled Eggs


This is our take on traditional style devilled eggs and we love it!!

Tip: We think the perfect texture for the yolk is a 5-6 minute boiled egg.

Hint: These make the perfect lunchbox or picnic snack!

Ingredients

2 free range eggs
2 teaspoons of unsweetened coconut yoghurt
1/2 teaspoon of Dijon mustard
1 good pinch paprika
1 good pinch garlic powder
sea salt and fresh cracked pepper to taste
chopped chives to serve (optional)

Method

  1. Hard boil your eggs to your liking and set aside to cool.
  2. Once cooled carefully remove the yolks and place in a small bowl with the remaining ingredients.
  3. Mash or whisk the mixture until smooth then place back into the empty egg whites and top with chives if using or a sprinkle of paprika.
  4. Pop them in your lunch box for a snack or serve with a salad for your breakfast or lunch!
