Creamy Vegan Potato Mash


If you served this mash to someone who is used to old school potato mash I highly doubt they would know it's completely vegan!

Hint: We used truffle-infused olive oil and the flavour was amazing!

Ingredients

100 grams of potato, diced in 2cm cubes
1/4 teaspoon of sea salt
1/8 small red onion, diced finely
2 teaspoons of unsweetened coconut yoghurt
1 tablespoon of plant based milk (we used Coconut Quench)
1 teaspoon of extra virgin olive oil

Method

  1. Place the potatoes in a small saucepan with the salt and add enough water to cover them.
  2. Place over a medium to high heat a boil until tender. Drain well and add the diced onion.
  3. Mash until combined then add the yoghurt, milk and oil. Mash or whisk until smooth and creamy.
  4. Serve with your favourite protein and veg.
