Jam Lamington Bliss Ball


The goji berries give this a little jam like hit. Other options are dried strawberries or raspberries or even some berry chia jam.

Ingredients

1 medjool date
1 teaspoon of goji berries
2 teaspoons of cacao powder
1 teaspoon of desiccated or shredded coconut
1 tablespoon of raw cashews
1 tablespoon of raw walnuts
2 drops of vanilla extract
1 teaspoon of water
Extra coconut for rolling

Method

Place all ingredients (except extra coconut for rolling) into a *small blender.  Blend for 10-15 seconds.  Roll into a ball, then roll into the extra coconut.  Eat immediately, or place in the fridge for later.

*A small blender is needed when making bliss balls for one.  If you don’t have one you can use a mortar & pestle to blend all the ingredients together to a fine consistency.
