Chocolate Pudding


Craving chocolate? It's super quick, seriously creamy and totally delicious! You wouldn't have any idea that it's made from avocado!

Tip: It's also super adaptable, you can have it as a soft pudding, a thicker mousse style dessert or a firm tart filling just by changing the amount of coconut oil.

Hint: To make it vegan just substitute the honey with maple syrup.

Ingredients

1/2 avocado
1 tablespoon of unsweetened almond milk or other plant based milk
1/2 teaspoon of vanilla extract
1 tablespoon of pure cacao
1 teaspoon of cold pressed coconut oil
1 1/2 teaspoons of pure honey

Method

  1. Combine all ingredients in a small blender and blend until all ingredients are combined and smooth, alternatively you could use a stick blender.
  2. You can eat right away as a creamy pudding or refrigerate for a firmer mousse type texture.
  3. If you add a little more coconut oil you can make quite a firm filling to put on a base or in a shell as a pie filling.
