Bread is one of the things most missed on a keto or paleo diet. This roll doesn't pretend to replace 'normal' bread but we think it's pretty amazing.
Note: This recipe makes 1 medium-sized bread roll, perfect for a burger but is easily made into 2 or 3 smaller rolls for use as a side over 2 or 3 days.
Tip: If you make them, the extra rolls are best stored in a brown paper bag and can be freshened up in the oven.

Ingredients
1/3 cup + 1 tablespoon blanched almond meal
2 tablespoon + 2 teaspoons psyllium husks
3/4 teaspoon of gluten free baking powder
1/4 teaspoon of sea salt
1/3 cup of boiling water
3/4 teaspoon of apple cider vinegar
1 egg white, lightly whisked
Method
Pre-heat your oven to 170°C
Place all of the dry ingredients into a small mixing bowl and whisk together well.
Stir in the hot water and apple cider vinegar, mix well before mixing in the egg white.
Massage the mixture a little and mold into desired shape. Alternatively mold into 2 or 3 smaller rolls.
Place on a lined baking tray and place on a lower shelf in the oven. Cook for 50 minutes to 1 hour for one large roll, possibly less for smaller ones (check after 40 minutes). You will know it's cooked when it sounds hollow when tapped top and bottom. Don't be tempted to take it out too early, you don't want a soggy bread roll but if you're pushed for time you can slice it in half and finish it in the toaster
Tip: You can add pretty much anything you like to this recipe to make it your own. We've tried fresh and dried herbs, different seeds and onion and garlic powders and they were all delicious!
