Orange Salad


Simple and delicious and ready in 10 minutes. Zesty and sweet all at the same time, it's light and fresh and works well as a side with your fave protein or double it for a simple light lunch.

Ingredients

Ingredients

2 cups of fresh rocket leaves
1/4 large navel orange, peeled and segmented
1/4 small red onion, sliced
1/4 small cucumber, sliced
10 grams of shelled hazelnuts, toasted and halved

Dressing

1/2 small garlic clove, crushed
1 teaspoon of extra virgin olive oil
2 teaspoons of fresh orange juice
zest of 1/4 orange

Method

  1. Place all of the salad ingredients in a mixing bowl. Mix the dressing ingredients in a small screw top jar and set aside. Toast the hazelnuts in a small pan over medium heat. They are done when the oils start releasing and they smell toasty.
  2. Toss everything together and serve.
