Zucchini Hummus


All the good things about hummus but it's paleo!
Use this hummus as a dip, dressing or side.
If you don't like the flavour of cumin you can use any spice you like. Paprika, turmeric or onion powder would all work.

This recipe makes 1/3 cup.

Ingredients

1/2 small zucchini (75g) skin on & chopped
3 teaspoons of hulled tahini
1 1/2 teaspoons of fresh lemon juice
2 teaspoons of extra virgin olive oil
1/2 small garlic clove
1 large pinch cumin
1/4 teaspoon of sea salt
fresh cracked black pepper to taste

Method

Combine all ingredients in a small food processor and blend until the texture resembles hummus. 

Note: It will be a little runnier than regular hummus but still hold together well.
