Creamy Pumpkin Mash


So much better than regular mash! Serve it on the side of everything!

Tip: All pumpkins are not created equal, some are drier than others so adjust the yoghurt to get the desired consistency.

Ingredients

100 grams of peeled pumpkin, diced
1/2 teaspoon of finely chopped ginger
1 pinch of ground cumin
1 teaspoon of coconut yoghurt
sea salt & cracked pepper to taste

Method

  1. Place pumpkin and ginger in a small saucepan, cover with cold water and place over medium high heat.
  2. Bring to a boil then reduce heat to medium low and simmer until tender and cooked through, 10-12 minutes.
  3. Remove from heat and drain, reserve as much ginger as you can. Sprinkle in cumin and salt & pepper to taste and mash or puree pumpkin until desired consistency.
  4. Stir through coconut cream and serve.
