Paleo Savoury Pancakes


Savoury Pancakes are not something we normally think of having but these are so good! Once you try them you will definitely be making them again.

1 free range egg
1/4 cup of blanched almond meal
1 tablespoon plus 2 teaspoons arrowroot or tapioca flour
1 tablespoon plus 2 teaspoons almond milk
1/8 teaspoon of baking powder
1 pinch of baking soda
1 pinch of sea salt
1 free range egg to serve

Avocado Cream

1/2 avocado (40g)
1 teaspoon of fresh lime juice
1 teaspoon of pure tomato paste
2 teaspoons of unsweetened coconut yoghurt
1 pinch of sea salt & cracked pepper to taste
1 teaspoon of finely chopped fresh coriander
1 small pinch of chilli flakes (optional)

Method

  1. Whisk all pancake ingredients together well and heat a pan to medium heat.
  2. Lightly grease the pan and add 1/2 the pancake mixture, cook until the bubbles pop through and nicely browned, turn carefully and cook until done. Remove to a plate lined with paper towel and repeat with remaining mixture.
  3. Meanwhile mash or blend all Avocado Cream ingredients together and set aside.
  4. Once pancakes are done add a little more oil to the pan and fry the extra egg.
  5. Stack the pancakes with avocado cream between and on top then add the fried egg.
