Rainbow Vegetable Dish


A vegetable bake with a twist. Light and delicious, it works well as a side with any main but is tasty just on its own!

Ingredients

100 grams of sweet potato, sliced thinly
1/2 large zucchini (80g) sliced
1 large Roma tomato (150g) thinly sliced
1/4 small red onion, sliced
2 teaspoons of grass fed butter
2 teaspoons of extra virgin olive oil
1 large pinch of ground paprika
1 large pinch of garlic powder
sea salt and cracked black pepper to season

Method

  1. Preheat oven to 180°C
  2. Grease a small oven proof dish and stand up the sweet potato, zucchini and tomato slices alternatively around the inside until filled.
  3. Separate the onion slices and place in and around gaps between the vegetables.
  4. Melt butter and add oil and spices, drizzle over vegetables and season with salt and pepper. 
  5. Cover loosely with foil and place in the oven for 10 minutes. Remove, uncover and place back in the oven for another 10 minutes or until cooked through.
Serve alone or with your favourite protein.
