Blueberry Lemon Overnight Oats


Let's just say one thing.... Blueberries & Lemon - YUM!

Tip: you can use all of one type of plant milk. But we think it's more delicious with a mix of both.

Ingredients

1/3 cup of organic rolled oats
1 tablespoon of chia seeds
1/3 cup of unsweetened coconut milk
1/3 cup of unsweetened almond milk
2 teaspoons of pure maple syrup
1/4 teaspoon of vanilla extract
Zest of 1 small lemon
1 small pinch Pink Himalayan Salt
1/4 cup of fresh blueberries

Method

  1. Put the oats, chia & salt into a jar.  
  2. Whisk the coconut milk, almond milk, maple syrup, vanilla & lemon zest in a small bowl or jug.  Add to the oat mix and stir well.  Continue to stir occasionally for 5 mins, then screw on the lid and put in the fridge overnight.
  3. You can either add the blueberries before putting it into the fridge or mix them through before serving.
