Simple Poached Chicken


This recipe never fails. If you follow the instructions properly you will have tender, juicy and delicious chicken to serve with your favourite sides. Hot or cold, it's equally as good.

Hint: This can be made ahead and kept in the fridge for up to two days. The method will also work with a chicken breast up to 250 grams.

Tip: Take the chicken out of the fridge 15 to 20 minutes before cooking.

Not: For AIP leave out the peppercorns.

Ingredients

1 long green shallots/scallions
1/2 teaspoon of whole peppercorns
3 slices of lemon
1 teaspoon of sea salt
125 grams of free range chicken breast as a whole piece

Method

  1. Place the shallots, lemon, peppercorns and salt into a saucepan with enough water that the chicken will be covered and bring to a boil.
  2. Add the chicken to the saucepan and bring back to the boil. Remove the saucepan from the heat, cover and sit aside for a minimum of 20 minutes. Remove chicken from poaching liquid, use right away or place aside to cool.
Note: Most chicken breasts will weigh around 250g and the poaching method works best with it whole. If you only want to use half you can refrigerate the other half for up to 2 days to use at another time.
