Coconut Milk, Lime & Coriander Dressing


A punchy & zesty dressing that is amazing on any salad or even warm veggies.

Ingredients

2 tablespoons of unsweetened coconut milk
Zest of 1 small lime
2 teaspoons of fresh lime juice
1/4 cup of fresh coriander leaves
Pinch of sea salt or pink himalayan salt

Method

Place all ingredients into a *small blender & blitz for around 10 seconds or until or ingredients are combined.

*When using very few ingredients you do need a small blender.  If you don't have one, you can use a mortar & pestle, or even finely chop & grate (microplane) the ingredients and mix together by hand.
