Vegan Cheesy Sauce


Creamy and cheesy without any dairy in sight!
This recipe makes enough for a side sauce with your fave vegetables or protein.

It will keep for a few days so if you don't use it all in one go we know you will find something else to put it on!

Ingredients

50 grams of cauliflower florets
1/2 teaspoon of cold pressed coconut oil
1/2 small or 1/4 large onion, sliced
1 small garlic clove, sliced
1/4 cup of vegetable stock or water
1 tablespoon of raw cashews
2 teaspoons of savoury yeast flakes
1/2 teaspoon of seeded mustard
1/4 teaspoon of sea salt

Method

  1. Put the cauliflower on to steam. While it's cooking heat a small pan to medium heat and fry off onion and garlic in the coconut oil until soft and fragrant.
  2. Place the cooked cauliflower, cooked onions and remaining ingredients to a blender and blend at high speed until smooth.
  3. Serve with everything!!
Tip 1: If you have vegetable stock it takes the flavour to the next level but water works just as well.
Tip 2: Mix whatever you like into this sauce to change the flavour, fresh herbs, spices, pesto etc.
