Waldorf Salad


A very healthy version of a classic salad. It still retains all of the flavours and is so very delicious!

Ingredients

Ingredients

1/2 baby cos lettuce
1/2 red apple, cored and diced
6 red grapes, sliced in half
1/2 stick of celery, sliced
5 raw walnuts, chopped
1 baby cucumber, sliced

Dressing

1 tablespoon of unsweetened coconut yoghurt
2 teaspoons of extra virgin olive oil
1 teaspoon of apple cider vinegar
1/4 teaspoon of Dijon mustard
1 pinch of sea salt

Method

1. Mix all salad ingredients in a serving bowl.
2. Whisk all dressing ingredients and season with salt to taste.
3. Pour dressing over salad and toss gently.
