Thai Coconut Chicken Soup (Tom Kha Gai)


This is one of those easy 'go-to' recipes that you will make again and again. Absolutely everyone we have served this soup to has asked for the recipe!

Hint: Want to bulk it up a little more? Add in some kelp noodles at the last minute.

Ingredients

100 grams of Chicken thighs cut into bite sized pieces
200 millilitres of full fat coconut milk
1/2 cup of chicken bone broth or stock
1/2 stem of lemongrass, bruised and halved
6 slices of fresh ginger
1/2 long red chilli, sliced + extra for garnish
2 fresh kaffir lime leaves, bruised
3 green beans, chopped
1/2 small zucchini (50g) sliced
2 teaspoons of lime juice
2 teaspoons of fish sauce
1/2 bok choy, sliced

Method

  1. Combine the coconut milk, broth, lemongrass, ginger, chilli & kaffir lime leaf in a heavy based saucepan over a medium heat & bring to a simmer. Allow to cook for 5 minutes
  2. Add the beans, zucchini & chicken to the pan and simmer for another 5-8 mins or until the chicken is just cooked through.
  3. Stir in the lime juice & fish sauce and add the Asian greens, allow to cook for 2 mins or until the greens are just wilted.
  4. Taste and adjust lime juice and fish sauce to suit and stir in the coriander leaves.
  5. Remove the lemongrass & kaffir leaves and ladle into your serving bowl. Serve with an extra lime wedge on the side.

Notes:
Possible substitutions: Replace zucchini or beans with a variety of mushrooms.
We used Bok Choy for the Asian greens but any greens can be used such as spinach, chard or silverbeet.
