Spicy Satay Beef Skewers


Whatever you want to call them, skewers, kebabs or kabobs, food on a stick is always a bit fun! Just be sure if you're using wooden skewers you soak them well so they don't burn!

Hint: To keep it paleo approved you can easily swap the peanut butter for almond butter.

Ingredients

100 grams of beef, thinly sliced
2 medium or 1 large mushroom (30g)
1 x 2.5cm slice of fresh pineapple
1/4 small red or green capsicum
1/2 small red onion

Basting Sauce

1 teaspoon of cold pressed coconut oil
2 teaspoons of pure peanut butter
1 teaspoon of coconut aminos or wheat free tamari
1 small garlic clove, crushed
1/2 teaspoon of coconut sugar
1/8 teaspoon of curry powder
1/8 teaspoon of chilli powder

Method

  1. Pre-soak two skewers in some cold water to avoid burning.
  2. Cut all vegetables into roughly even sizes then divide ingredients in half evenly. Thread onto the 2 skewers with meat, packing them tightly.
  3. Mix all of the ingredients for the sauce together until combined well and set aside.
  4. Place the skewers on a hot grill and brush ½ of the sauce over both. Allow to cook for 2-3 mins.
  5. Turn the skewers over and brush over the remaining sauce, cook for a further 2-3 mins. Continue cooking, turning frequently to ensure even cooking until meat is just cooked but not overdone.        

Note: These are best cooked on a barbecue or a hot skillet pan. But any fry pan will work.
