Orange Chicken


This gorgeous recipe has a few steps and a little extra prep but if you have the time we guarantee you will love it. The sauce is seriously addictive!

Hint: If you slice the chicken before marinating you can speed up the cooking time.

Tip: We served this with some fresh steamed greens but it also works beautifully with a side of rice.

Ingredients

125 grams of chicken breast
2 teaspoons of cold pressed coconut oil
2 fresh orange slices
1/2 long green shallot/scallion(green part) sliced
1/4 teaspoon of sesame seeds

Marinade

1 1/2 teaspoons of coconut aminos
1/2 teaspoon of sesame oil
1 teaspoon of grated fresh ginger
1/2 long green shallot/scallion(white part) sliced
1/4 teaspoon of sea salt

Sauce

2 tablespoons of water
1 tablespoon of fresh orange juice
2 teaspoons of pure honey
1 teaspoon of coconut aminos
3/4 teaspoon of rice vinegar
zest of 1/4 orange
1/2 teaspoon of grated fresh ginger
1 small garlic clove, crushed
1 small pinch of chilli flakes
1/2 teaspoon of tapioca flour mixed with a little water

Method

  1. Mix all of the marinade ingredients and add to a zip-lock bag with the chicken breast. Coat well and marinate at least 30 minutes.
  2. Heat the 2 tsps of coconut oil in a fry pan, remove the chicken from the marinade and cook over a medium to high heat until cooked through. Approximately 20-25 minutes.
  3. While the chicken is cooking place the sauce ingredients, except the arrowroot mixture into a small saucepan and bring to the boil, stirring frequently. Whisk in the arrowroot mix and continue stirring until the sauce starts to thicken. Turn off the heat, the sauce will thicken further as it cools.
  4. In the last one minute of cooking the chicken, place the orange slices in the pan and cook a little on both sides.
  5. Place orange slices on the plate, top with the chicken and pour over the sauce. Garnish with shallots & sesame seeds.
