Maple Mustard Chicken with Pumpkin & Apple Hash


We love the flavours in this dish, the combination is something a little different and who doesn't love a one-pan dish?

Tip: If you line the pan with baking paper the clean up is minimal too!

Ingredients

2 teaspoons of cold pressed coconut oil, melted
80 grams of diced pumpkin
1/2 small red apple, skin on and diced (45g)
3 baby carrots or 1/2 small carrot (40g) sliced
125 grams of chicken breast
1 1/2 teaspoons of pure maple syrup
1 1/2 teaspoons of seeded mustard
1 teaspoon of fresh lemon juice
1 pinch of ground cinnamon
sea salt and fresh cracked pepper to season

Method

1. Preheat oven to 180°C
2. Toss diced pumpkin and carrots in a small oven proof dish with coconut oil, season with salt and pepper and bake for 10 minutes
3. While vegetables are cooking, mix syrup, mustard, lemon juice and cinnamon together and set aside.
4. Remove pan from oven, mix in apple then push vegetables to the sides. Place chicken in the middle of the dish and baste with half of the sauce.
5. Cook for 20 minutes taking out half way through to baste with the remaining sauce. Ensure chicken is cooked completely through. Serve chicken and vegetables with all of the pan juices.
